Saute the lotus stem pieces in the oil. Stir in ginger paste.Sprinkle turmeric, red chilli, coriander, cumin and aniseed powders

Ingredients

    • Lotus stems(cut into small pieces) 500 g
    • Oil 1 tbsp
    • Ginger paste 1/2 tbsp
    • Turmeric powder 1 tsp
    • Red chilli powder 1 tsp
    • Coriander powder 1 tsp
    • Cumin powder 1 tbsp
    • Aniseed(ground) 1/2 tbsp
    • Asafoetida(dissolved in a cup of water) a pinch
    • Salt to taste
    • Rice(dry roasted on a griddle) 1 tbsp
    • Green cardamom 4
    • Black cardamom 2
    • Cinnamon 1 small stick
    • Black peppercorns a few
    • Almonds(blanched) a few
    • Yoghurt 1 1/2 cups

  • Cooking Directions


  1. Stir in ginger paste.
  2. Sprinkle turmeric, red chilli, coriander, cumin and aniseed powders.
  3. Stir over medium heat till all the pieces are well coated.
  4. Add the dissolved asafoetida and salt.
  5. Grind the roasted rice, the green and black cardamoms, cinnamon, black peppercornsand almonds, and mix them with the yoghurt.
  6. Add yoghurt mixture to the pan and bring to boil on medium heat.
  7. Cover and simmer gently.
  8. After few minutes remove from stove but leave covered for a further 5-10 minute

    Nadru Dam is ready for serve
